These light, fresh tasting kebabs flavoured with honey, lime juice and fresh mint are perfect for a summer barbecue.
Preparation time: 20mins, plus 1-2 hours or overnight marinating.
Cooking time: 8-10mins.
500gms (1lb 2oz) lean turkey breast fillet
1 clove garlic, crushed
2tblsp clear honey
grated zest and juice of one lime
3tblsp chopped fresh mint
150gms (5.5oz) low fat natural yogurt
300gms (10.5oz) button mushrooms
salt & pepper
1. Cut the turkey into bite sized pieces and place in a bowl. Add the garlic, honey, lime zest and juice, mint and yoghurt. toss well to coat
2. Place in the refrigerator to marinate for 1-2hrs, or overnight.
3. Toss the mushrooms in the turkey mixture. Thread the turkey and mushrooms alternately onto skewers, sprinkle with salt & pepper.
4. Barbecue for 8-10 mins, or until cooked.
