Minty Yoghurt Chicken

4 chicken breasts, skinned
1tbs clear honey
1 tblsp lime or lemon juice
1 tblsp plain yoghurt
pinch of ground ginger
4 tblsp fresh mint, chopped
salt and pepper



The subtle spicy flavour of mint and ginger adds a hint of the orient to this succulent marinated chicken.


Cut the chicken into bite size cubes
In a bowl mix together the yoghurt, honey, lime or lemon juice, half of the mint and the ginger
Add the chicken and mix to coat
Leave to marinate for 20 to 30 mins
Place the chicken on a grill pan and grill until golden brown and cooked through


Sprinkle the remaining mint over as a garnish





Serve with boiled new potatoes and tomato salad
