Fennel, Mint and Pea Soup


600 gms fennel, chopped
500 gms frozen peas
900 ml veg stock
6 tsps dried mint or 6 tbsp fresh mint, chopped
salt and pepper


Place the fennel and peas in a pan with the stock
Cook until fennel is tender
Add the mint
Pour into a blender and blitz
Return to the pan check seasoning
Serve
