Citrus Chicken

I really love this chicken...it is a kind of mish mash of a number of different recipes for Citrus Chicken I have read in different books.  I  found some of them to be really fierce and after a number of attempts I arrived at the combination I preferred.  Here it is - but I suggest you use this as a start point and find, mix and match the fruits until you find your favourite.

Ingredients
Chicken Breast or Thighs (boned and skinned)
1 x Grapefruit
1 x Clementine
1 x Lemon
1 x Lime
Ground Cumin
Ground Coriander



How to do it

It is so simple - squeeze the juice of the lemon, lime, clementine & grapefruit into a bowl.  I use ruby grapefruit for this because I like them better and it gives the marinade and meat a pale blush colour.  Add a teaspoon of ground coriander and then of cumin - you can add chili too if you like.

Cut the chicken into pieces - I usually do them into fillet shapes big enough to  eat them with your fingers.  Put the chicken into the fruit juices and leave in the fridge.  I do it a good few hours before but you can leave it overnight if you want.

Grill the chicken - or you can put it into a baking tray, adding the marinade and cook it in the oven.  It gets very intense when cooked in the marinade - in fact my ears are twinging at the thought! That's the way I like it best of all.
