Two easy party nibbles


Here are two quick and easy party nibbles.  I mentioned these two because they use things that I always have around at Christmas and don't particularly use up.  They are great if you find yourself having to provide supper, hadn't catered for it and time is short - Stepford wives move over, we can whip up these things in a mo' with no fuss!

Walnut & Stilton Rolls
1½ oz chopped walnuts
2½ oz stilton, crumbled
10 slices thin brown bread (crusts removed)
2 oz melted butter

Preheat oven to Gas 6/180C or thereabouts - mix the chopped nuts and crumbled cheese together.  Lay out the slices of bread and divide the nut/cheese filling between them.  Roll up each slice into a log and fasten with a cocktail stick - place on a baking sheet, brush with melted butter and bake for between 5 - 10 mins.  Keep checking to get the desired colour.  You could serve on a platter with a good dip of your choice.

Caesar Cups
10 slices thin white bread (crusts removed)
2 tbspn olive oil
1 oz finely shredded lettuce ( Romaine or Little Gem are good for this recipe)
1 oz parmesan shavings
2 tbspn Caesar dressing
(also you can add turkey breast, or finely chopped ham and whatever else is kicking about after the main event!)

Preheat oven to Gas 6/180C (see you can do both of these recipes together).  Cut bread into 2½ inch squares.  Lightly brush the inside of muffin tin with oil, press a square into it and brush the inside too.  Bake for about 10 mins - keep checking.  Take out of the oven and fill with whatever you are using - obviously you prepare the fillings in the 10 mins the bread is cooking.
